Happy Birthday Kate!
To my 22 year-old going on 6, I couldn’t have thought of a better dessert for you than these ice cream cone sugar cookies.
I found the idea for this recipe from CookieCrazie.com where they gave an easy tutorial on how to make the sugar cookies look like scoops of ice cream. I knew that they would be the the most reflecting of Kate’s young-at-heart personality.
The inside of the cones were stuffed with good-ol’ Rice Krispie squares, which have to be the most difficult thing not to eat out of the pot.
The recipe suggests that you butter your hands before handling the Rice Krispie mixture but if you want an even better tip, don’t butter your hands and you will have no choice but to eat your way out of the Rice Krispie square quicksand that is glued to your hands.
In celebration of Kate’s b-day, the K’s and I visited our blonde bombshell Kat at her home in the Canadian Hamptons-equivalent. It was a weekend surrounded by friends, sun, great food and an amazing family.
I was stumbling the internet a few months back and found this quote by Elisabeth Kubler-Ross that really resonated with me, and particularly reminded me of Kate. After spending the weekend at Kat’s, it was clear to me that this quote extended to her and her family as well:

These persons have an appreciation, a sensitivity, and an understanding of life that fills them with compassion, gentleness, and a deep loving concern. Beautiful people do not just happen.
